I am able to select the actions dropdown but I cannot set the value
Thoughts on what to try?

UI control for dropdown is not with select tag. So select value by option or text interaction will not work. Expand the drop down by clicking on it and then configure click action on value you want to select

When I click the ACTIONS button with the config fields tool – the list expands
But then when I go to click start config to select the option from the menu the menu disappears

First expand the list. Then press short cut Ctrl+Shift+S to start scrapping and then configure the value in expanded list

By pressing Ctrl+Shift+S did the strat scrapping not start and were you not able to scrap the dropdown element

Then it appears that selector is not getting captured correctly for the element highlighted. Try using some another selector using manual selector approach or as a last fall back use image based automation

HTML DOM which you sent is for the entire page. I am not able to figure out exact dom for the dropdown in context. Can u invoke java script to expand and select value.
